The meat is incredibly firm and flavorful, with a perfect interplay of the slightly acidic fermentation of the skin, the richness of the garlic, and the gentle layers of spices. As it warms, it releases a rich, fatty aroma, elevating the mild sweetness of the pork to another level.
Easily eaten on its own, or combined with nuts, olives, and firm cheese to create a party platter, it's also the perfect accompaniment to craft beer.
