What is Lacón?

Salted pork shoulder (Lacón) is a typical product from the north of Spain (mainly in Galicia and Asturias). It comes from the front leg of a pig. Production process is similar to ham but the curation time is much shorter, ranging from 15 days to one month. It is generally used for cooking.
