Made from a clever combination of 60% cow’s, 20% sheep’s and 6% goat’s milk, aged for 6 months with a cotton cloth and with particular care taken during the six months in the maturity chambers.
During the ripening process the cheese is brushed and rubbed several times with olive oil. The enzymes released by the mould during the Affinage, coupled with the olive oil, provide our cheeses a great flavour and character.
This is award winning cheese (4 international awards) with a distinctive, intense flavour, slightly strong, authentic taste; refined aroma; straw yellow colour and with a firm texture with small, well-distributed eyes.
